Crock pot chicken tacos with mango salsa and goat cheese

Cook Time: 6 hr
Ingredients (Serves 4)
- 4 chicken breasts
- 1-2 tbsp taco seasoning
- 16 oz mango salsa
- corn or flour tortillas
- Montchevre goat cheese
- Lime (optional)
Instructions
Combine chicken, seasoning, and 12 oz. salsa in crock pot
Cook on low for 6 hours
Shred and stir chicken with fork
Place shredded chicken on tortillas, garnishing with lime (if desired), additional mango salsa, and crumbled Montchevre goat cheese

Ooooh, I like the goat cheese. I am going to have to try this next time. We eat tacos every Tuesday, so next week it is.
